New Venue on the Mornington PeninsulaJOB OVERVIEWWe are currently searching for a highly qualified and experienced Head Sushi Chef to lead our culinary team at our upcoming restaurant located in Sorrento.
As the art of sushi preparation and presentation is so critical to the customer, as well as to the reputation of the restaurant, we are looking for a chef who is meticulous and precise in their approach.The successful candidate must be thoroughly trained in the Japanese techniques of creating various sushi rolls, sashimi, nigiri, maki, and other related delicacies and sauces.
3+ years of experience working or apprenticing with a master sushi chef or working in a sushi restaurant is preferred.
Experience working across other cuisines is desirable.RESPONSIBILITIES Planning menus for the different areas of the venue, organising and taking inventory of seafood, produce, and other necessary culinary supplies.Preparing and cooking food with a focus on Japanese food, but not excluding other cuisines, for both dine-in and take-away.Monitoring and maintaining a high level of quality sushi and other menu items.Creating signature items for the restaurant and creatively planning with other chefs and prep staff.Coordinating with the wait staff to create best practices for serving customers.Training new employees and apprenticing chefs.Communicating with food and materials vendors to manage inventory needs. NECESSARY SKILLS AND QUALIFICATIONS Ability to oversee kitchen operations, maintaining hygiene regulations, and planning and executing necessary changes or adjustments to food preparation.Experience creating multiple items including sushi-related items, and across other cuisines.Knowledge of the preparation and presentation of many different types of sushi and seafood.Meticulous, accurate, and dedicated to producing quality cuisine.Adept at managing people and delegating orders/jobs.Prior experience or a degree from a culinary institute. PREFERRED SKILLS AND QUALIFICATIONS 3+ years experience in a high-quality sushi restaurant.Experience working with other cuisines.Ability to work alternating shifts, including coverage on nights and weekends.
