Position Overview
Job Purpose
Lead the daily high-volume pastry and bakery production of a central kitchen supplying multiple outlets (restaurants, cafés, hotels, retail, catering). Deliver consistent quality at scale, on schedule, within cost and full compliance with UAE / Dubai Municipality food safety standards.
Key Responsibilities
Production & planning
- Plan and execute daily/weekly production schedules based on outlet orders and forecasts.
- Produce the full pastry range at volume: viennoiserie, laminated dough, entremets, cakes, desserts, breads, plated components, frozen/chilled semi-finished products.
- Scale recipes accurately for batch production; maintain standardized recipes, gram-weight specs and yields.
- Operate and manage central-kitchen equipment: deck/rack/convection ovens, sheeters/laminators, planetary mixers, blast chillers/freezers, tempering machines, depositors.
