**Estate** - Taking inspiration from our picturesque beachy location and paying homage to the lively seaside bars and bistros of America’s east coast, Estate offers simple, tasty seafood dishes and incredible cocktails within a relaxed, casual luxe atmosphere.

The perfect place to relax and look out onto Coogee Beach, our three separate offerings within Shutters – the **Restaurant** , the **Bar** and the **Lounge** makes this all-day venue a place where our guests can enjoy their next dining experience or event.
As a Junior Sous Chef, you will partner with our Venue General Manager and Head Chef to take the lead with our our restaurants & bars kitchen team - responsible for day to day kitchen operations.
You’ll manage busy kitchen operations, day to day menu implementation, food safety training and audits, administration and kitchen financials with an emphasis on maintaining hygienic standards and practices, employee engagement, and overseeing the preparation and presentation of a consistent food product which exceeds customer's expectations.
On the daily you'll provide direction to the team, but you’ll encourage their learning and growth by coaching and inspiring them with your passion for food, service and teamwork.
You'll be diligent and adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
The successful candidate will have a minimum of 5 years’ experience as a Chef and at least 2 years supervising or leading a culinary brigade.
Experience working with a variety of service styles would be an advantage. You'll have experience with stock control and inventory management as well as being committed to training, development and creating a positive culture.
You'll bring excellent communication skills and lead from the front with your team.
A flair for producing innovative food concepts is a must in addition to an ability to work under pressure whilst being organised, optimistic and effective in fast-paced situations.
